Halloumi wrapped in Bacon and served with fresh pesto.

You will need Streaky bacon, but if you have shortcut bacon this will be fine. Halloumi – of course, we recommend that you use our Awassi Fresh Halloumi made from 100% sheep milk (very authentic) Fresh pesto – if you don’t make your own pesto (I don’t either) you can use a fresh pesto from the deli of all supermarkets. Toothpicks.

One piece of bacon can make three wraps, so purchase enough bacon to make at least 4 wraps per person.

Heat the oven to 180 degrees and cover a tray with greaseproof paper.

Cut the Halloumi into roughly 4cm pieces – about the size of your thumb and not quite as thick.

Cut the bacon into strips that are wider than 4cm and the length should be 3 times that length. You are going to wrap the halloumi in the bacon – really simple, don’t overthink this, you are just covering the Halloumi in bacon.  Use a toothpick to hold in place and bake in the oven for approx. 15 minutes or until the bacon is cooked.

Place on a plate or serving board and spoon a small amount of the pesto over the top.
