Do you want to learn the How, Where and Why of Cheesemaking?

A Cheese Experience on the farm is not just about learning how to make cheese, it also involves learning about the milk. A full day at the farm starts with milking – yes that’s right, arrive at 8 am and help with the milking. Our Awassi girls are very relaxed in the milking parlour and are quite happy to meet new faces. Learning about the milk will give you a better understanding of what makes a great cheese – yes a Great Milk, makes a Great Cheese.

In the Cheese room, we will make a soft cheese and a hard cheese for the day. Learning how soft cheese is made will give you a better understanding of why temperature and curd sizes are important to making different styles of cheese.

Labneh is a traditional Middle Eastern Cheese that we make weekly on the farm, you will learn to make this simple cheese from our Sheep milk yoghurt and take home your own labneh bag and hook. Our beautiful feta is also a great example of a soft cheese made at Awassi, you will get to feel the curd and smell the aromas of this special farmstead cheese.

After a farm lunch, we will head back into the Cheese room and make a hard cheese. By understanding the process of making a hard and soft cheese you will have a better appreciation of the different styles and flavours. Throughout the day we will taste a variety of cheeses that have been made on the farm. We finish our day by sitting in the Avocado Orchard tasting cheese and sampling fresh local produce. ‘The Secret Ingredient is always cheese.

Our aim is to share with you our knowledge of not only cheese making but cheese appreciation. You will take away from this amazing experience a greater sense of food value and learn ways to create your very own cheese at home.
